Chicken Cauliflower Fried Rice

I have always adored fried rice and was very saddened when learning that I could no longer have it…or at least I thought I couldn’t. Cauliflower rice is extremely versatile and can be made into many “mock” foods. Cauliflower Fried Rice is one of my favorites as well as my family. Adding chicken for the protein makes it even more special.

Being a busy mom, wife, and having a full time job has taught me that shortcuts can be your best friend. If available in your area I suggest buying the cauliflower already riced. It can be found in the frozen section at your local supermarket. If it’s not available then using a Food Processor to rice it works well too.

Ingredients

4 C Riced Cauliflower

2 TBS Toasted Sesame Oil

1 lb boneless chicken breast, chopped into 1/2″ dices

3 carrots, diced

1 onion diced

2 garlic cloves

1 C frozen peas

1/4 C San-J Tamari Gluten Free Soy Sauce

1/4 C sliced green onions (garnish)

Sesame Seeds (garnish)

Directions:

1. Heat wok on medium high heat

2. Add 1 TBS of sesame oil. Add chicken

3. Saute chicken for 4-5 minutes

4. Push chicken over to one side of pan, add 1 TBS of sesame oil on the other side along with carrots, onion, garlic, and peas.

5. Saute vegetables for 4-5 minutes

6. Add cauliflower rice along with tamari sauce

7. Toss everything together and cook for 2-3 minutes

8. Garnish with green onions and Sesame Seeds.
